INGREDIENTS: 

  • 1 12 oz. OffBeat Midnight Almond Coconut Butter
  • ¼ cup raw honey
  • 1 large egg
  • 1 tsp. vanilla
  • 1 cup shredded zucchini squash
  • 1 ½ cup old-fashioned rolled oats
  • ¼ cup flaxseed meal
  • ¼ cup cacao powder
  • ½ tsp. baking soda
  • 1 cup mini chocolate chips

DIRECTIONS: 

  1. Preheat oven to 350 degrees.
  2. Add the Midnight Almond Coconut Butter, honey, egg, vanilla and zucchini to a large bowl. Mix until well combined. Stir in the remaining ingredients.
  3. Spray an 8x8 baking pan with cooking spray. Spread mixture into the pan and bake for 12-15 minutes. Middle will still look a little gooey in the middle. Enjoy!
